It’s simply one of the best breakfast combinations i can think of! Fish on warm bread! When everyone was frantically stocking up on loo roll and dried pasta I was busy sourcing fish! I cheekily bought 5 times of sardines and mackerel knowing that pasta was not going to be my choice in the days before the world ended! No way, I was determined if push came to shuv with a belly full of vitamins, minerals, Essential fatty acids and a flourishing gut microbiota! Welcome to the life of a nutritionist!

The Scandinavians are pretty good at fish for anytime of the day but if your a Brit not living on the cost then fish is not always at the front of your mind upon waking!

For me fish is one of the most versatile foods. You can cook it on anything remotely hot, its quick, needs little tampering with before hand if any and it light on the digestive tract, full of goodness, versatile and packed full of protein!

I do wonder why people feel the need to give up fish, but each to their own!

What you will need:

  • Toast
  • Fish

What to do:

So grab a tin of sardines at the back of the cupboard! It you cant remember buying them recently just look for old herbs or the powdered mustard at the back of the shelf and the tinned fish shouldn’t be too far away!

Empty the fish into a bowl,

Take a jar of piccalilli and mix in a generous sized spoon into the sardines

Mix with a fork

Toast a piece of bread (just not white sliced)

Then either empty the fish on to the bread to coat the toast in a slithering of salted butter!

Top with watercress or fresh herbs or tomatoes

Eat and do not share!

Enjoy!
