Mackerel and Spring Greens on Toast
What you will need:
- Fresh water mackerel x 2
- spring greens – bunch
- English mustard
- Sough dough or your choice
- radish
What to do:
In a la carouse dish (I just received one for my birthday) or a casserole dish which some oil around the pan, throw in a pinch of sea salt and black pepper and wait for the heat to rise.
then add your spring greens with about half a glass of water and keep the heat low so nothing is burning or sizzling too much.
Then add your mackerels on top of the greens, put the lid on and go and drink your coffee or set the table.
on your return flip the fish and make sure nothing is too hot neither sticking, ie the skin, this is a sign the pan is too hot.
Then take the fish out and let cool on a plate.
Toast your sough-dough or if you are bread free skip this part. Spread with English mustard.
Add a layer of chopped greens onto the platform of toast and artistically place beautiful chunks of fresh water mackerel around. Be sure not to waste any!
Garnish with radish!
This is as ever a meal that can be eaten at anytime of the day and at a table with a knife a folk.
Its one of my favourite breakfasts and its so good you always want more but don’t! Ascertain discipline and Move slowly away from the kitchen!
