Make Menopause Muffins

This is a great recipe to not only have a treat but also a muffin jam packed full of goodness and all the nutrients for supporting the endocrine system. Easy and quick to make. You’ll love them!

What you will need:

  • 2 x courgette
  • 260g (2cups) Brown flour
  • 260g (2cups) Chickpea flour
  • 1 tsp of baking powder
  • 1 tsp of salt
  • Turmeric
  • Goats cheese or Feta
  • 3 x eggs
  • 1 x carrot
  • 250ml milk

What to do:

  1. Turn oven on to warm to 200
  2. Grate the courgettes and carrot into a bowl
  3. Mix flour and baking powder in a separate bowl
  4. Combine goats cheese into the bowl with flour
  5. Crack 3 x eggs into bowl with grated veg and stir
  6. Gradually pour milk into veg and mix 
  7. Gradually pour flour into veg mix and mix well to form a paste
  8. Pour mixture into individual lined or greased muffin tray
  9. Bake for 20 minutes or until golden!
  10. Enjoy!
