The Grated Carrot Salad

A raw carrot can help improve your digestive system, thyroid function, and hormonal balance. Eating carrots can help lower anti-thyroid hormone, reduce the burden on the liver, and allows the GI tract to detoxify endotoxins and estrogen.

So many people have intestinal inflammation, which can become so severe that the intestine leaks endotoxins and inflammatory mediators into the bloodstream.

According to Dr Ray Peat, endotoxins and inflammatory mediators from the intestine poison the liver as well as the energy-producing system of our cells, resulting in chronic inflammation and hormonal problems such as estrogen dominance and low thyroid function.

When grated lengthways, they mop up all that excess estrogen, histamine, and serotonin, which decreases stress on the body and so lowers the stress hormone cortisol. The upside of this is that a carrot a day can increase your body’s production and efficacy of progesterone and testosterone. 

Eat between meals on its own, as when eaten with food, can decrease the absorption of nutrients from other foods and therefore create hypoglycemia.

What you will need:

  • Carrots (organic)
  • Olive oil
  • Sea salt

What to do:

  1. Grate a medium organic carrot lengthways
  2. Drizzle with olive oil
  3. Sprinkle with sea salt.
  4. Chew every mouthful
  5. Take your time
  6. Put your phone down
  7. Relax and feel the magic happen
