Tuna, horseradish and spring onions on a garlic and spinach salad

This can be breakfast or it can be lunch! I had this at about 11 am so it was a sort of in between meal! 

I was feeling like I needed a raw meal and I wanted garlic! I use a lot of garlic in my cooking and i had just been to Waitrose and bought some Elephant Garlic which is absolutely enormous! I was feeling like my gut needed picking up so I made the following meal. This was enough and more for two people.  

What you will need:

  • I clove of elephant Garlic 

  • 8 spring onions 

  • 3 handfuls of raw spinach 

  • 2 strawberries 

  • 2- 3. duck/ hen eggs  

  • Sourdough toast 

  • Tin of Tuna ( B ONITO DEL NORTE EN ACEITE DE OLIVA) 

  • Horseradish a thumbnail size and grate 

  • Olive oil 

  • pepper and salt 

What to do:

Bring a saucepan to the boil and add your eggs. Once boiled rest in cold water and peel and slice. Make sure you slice when cold otherwise they wont turn up looking their best. 

Finely chop the spring onion and mix into the tuna in a bowl. Grate on the small grater the horseradish and add into the bowl and mix. 

Wash the spinach and gentle tear the spinach into a bowl. Finely chop and dice the garlic and add also. Drizzle the olive oil over the spinach and garnish with two strawberries. 

Toast and butter the sourdough or not.

Add the tuna mix and place the sliced egg on top and accompany with the spinach salad. 

If you made too much then you can have leftovers for your next meal! 

Top Tips:

This is great for your health, horseradish is a wonderful detoxifier for the liver and the raw garlic has its strongest levels of Allicin when eaten this way. 

You will not only be increasing your antioxidants and vitamin levels but you will also be strengthening your microbiome. 

If there are ingredients you don’t like then simply change to suit.
