Chocolate Fudge

Not to be mistaken with shop bought fudge.

Let’s talk about fudge! Thought it was bad? Think again! I’m not talking about the bright pink or green stuff but real clotted cream fudge!

The body needs glucose it’s essential for the body and all it’s systems to function. People should wax lyrical about giving up sugar are causing more damage to the physiology with diets becoming far to lean. Eating to clean can also provide a place for binges to take place and in healthy habits to become common. Fat is where it’s at! Don’t be scared of it and make sure it’s in your diet. 

If you turn your fudge into chocolate fudge then you’ve got a really superfood fudge!

?Linoleic acid‘s do seem to contribute to heart disease and  sun damage they’ve been known to block cellular respiration creating damage to the cell. Chocolate is high and magnesium potassium zinc niacin copper and folate.

?Anything containing gelatin is also full of glycine and glutamine in amino acids that help lower inflammation within the gut.

These amino acids also balance the pro inflammatory amino acids of tryptophan and methionine too much tryptophan converts to serotonin and as much as we like to believe it’s the happy hormone too much of it can inflame the cells.

?Coconut oil prevents bacterial overgrowth is in the small intestines as it’s antimicrobial and also an immune booster it’s a saturated fat protects us fromTissue damage.

?Chocolate chocolate pact with magnesium therefore creates a parasympathetic drive in the intestines helps sore muscles improves mood and helps sleep. So think again about your fudge if it’s made full of good ingredients as such as the ones I’ve mentioned you really can’t go wrong but if you’re dipping into a bag of Harry Bos then maybe you need to think again.

What you will need:

  • 115g Coconut sugar raw
  • 65g Cacao (raw)
  • 2tb Gelatin
  • 1tb Coconut oil
  • 1/2 Cup Grass fed milk
  • 1 x Pasteurised egg yolk
  • Pinch of sea salt
  • Splash of vanilla
  • 1tsp raw honey

What to do:

  1. Mix all the ingredients together over a low heat in your pan. Keep whisking slowly and evenly until all the sugar melts and the gelatin has liquified. 
  2. Make sure to add the honey last once it is cooled to keep all its properties.
  3. Poor or spoon the mixture into your molds
  4. Pop it in the fridge for an hour and bring out and eat preferably with a friend

 

Top Tip:

If you are someone who wakes in the night especially between the hours of 2 am- 4 am then have one just before you go to bed!
